Tonight’s the annual chef’s cook-off to benefit St. Paul Catholic School.
St. Paul Catholic School will host its annual Chef's Classic Knock OUT ‘Bout on Saturday.
The event is at Saint Thomas Aquinas High School in Overland Park from 6-9 p.m.
Local chefs will be participating in two rounds of head-to-head competition. The top two scoring chefs will continue to the "Iron Chef" style finals.
The fundraiser, which benefits St. Paul Catholic School, will include a food and beverage experience and a live and silent auction.
The 2012 winner stopped by the 41 Action News studios Saturday morning.
Here is Charles d'Ablaing's recipe for
Warm lobster and mushroom salad, lambs lettuce, confit tomatoes, white balsamic vinaigrette.
2 oz. lobster meat
1 cup mushrooms
1 tbls. Shallots, chopped
1 tspn. Chives, chopped
3 tbls. Dry white wine
1 oz. olive oil
Sautee the shallots and mushrooms over medium heat for 5 minutes, add the lobster meat and wine, cook until firm. Finish with chives and remember to season with salt and pepper every step of the way.
10 grape tomatoes
1 oz. rendered duck fat
2 oz. olive oil
3 bay leaves
1 sprig of thyme
1 tspn. salt
Combine all ingredients in a small baking dish and place in the oven at 250* for 1 hour
1 oz. white balsamic
½ tspn. Garlic, minced
1 tspn. Honey
½ tspn. Dijon
½ tspn. salt
Combine all ingredients in a blender and mix until emulsified.
