KANSAS CITY, Mo. - Children's Mercy Hospital is being recognized for its healthy meal choices for employees.
The hospital recently earned the Gold Apple Award for its high nutrition standards. The hospital does this by only serving foods based on strict nutrition criteria and easy-to-read labels. Each meal is only 600 calories.
Children's Mercy also has a nutrition counselor onsite to support employees in their efforts to be healthy.

Balsamic Glazed Chicken Breast with Brown Rice, Steamed Broccolini & Baby Carrots.

2 Tbsp. Balsamic Vinegar
2 tsp. Dijon Mustard
3 Tbsp. diced green onion
1 tsp. chopped garlic
2 medium leaves fresh basil - diced
1 lb. boneless, skinless (lower sodium) chicken breast
1 cup uncooked brown rice
A pinch of salt
½ tsp - dried dill
2 Tbsp. orange juice
4 stalks broccolini (or 2 cups broccoli florettes)
1 tsp. red pepper flakes
2 cups baby carrots
Directions: In a small bowl mix the first 5 ingredients together. Cut the chicken breast into 4 pieces. Place the chicken into a small shallow container, pour the balsamic marinade over the chicken, cover and place in the refrigerator 30-45 minutes.
Add 3 cups water, the rice, salt, dill and orange juice into a small pot and simmer over medium low heat until the liquid is evaporated. Remove from the heat and keep warm.
Steam the carrots using a steamer basket for 12-15 minutes or until tender, remove, keep warm, then steam the broccolini (or broccoli) for 5-6 minutes until cooked, but still crisp. (In place of steaming, simply add to simmering water for 10 minutes for the carrots, 3-4 minutes for broccoli or broccolini.
Heat a medium sized skillet over medium-high heat, add the marinated chicken breast and cook for 5 minutes, turn over and cook for 3-4 minutes, or until the chicken is cooked to 165 degrees.
Place cooked chicken on a plate along with ¼ of the rice, carrots, and broccolini. Squeeze a few drops of lemon juice onto the broccolini and a sprinkle of red pepper flakes.
