The Culinary Center of Kansas City is turning adding cooking demonstrations to the Downtown Overland Park Farmer's Market. The demonstrations will be done by Chef Sandy DiGiovanni the first Saturday of every month.

Spring Pea Guacamole
Recipe Yields 2 cups
Prep time/ 10 minutes total
* 2 cups fresh or frozen peas (or you can add 1 cup peas with either 1 cup well cooked broccoli, edamame, asparagus tips or 1 whole avocado peeled and pitted)
* 2 tbsp lime or lemon juice (about 2 limes fresh or 1 large lemon fresh)
* 1 medium tomato seeded and diced
* ½ red onion diced
* 1 jalapeño or Serrano chili seeded and minced (If you like lots of heat mince with seeds in)
* ¼ cup chopped cilantro
* 2 cloves garlic minced
* ½ tsp sea salt
* ¼ tsp black pepper
** In a blender or food processor, blend peas until smooth (or other veggies of your choice) If not using blender or processor mash with a fork or potato masher.
** Add lemon or lime juice, tomato, onion, garlic, salt and pepper, jalapeno/Serrano pepper and cilantro. Mix well.
** If Guacamole won’t be served immediately, press plastic wrap directly onto the dip to prevent browning.
** Serve with chips, or raw veggies or top tacos. (Great as a fish topper)
