Our kitchen has gone to the foodimals! Kids are getting excited about nutrition with Foodimals, inspired by "Cloudy with a Chance of Meatballs 2". 4 OZ low-fat yogurt (any flavor)
4 OZ of your favorite fresh fruit (strawberries, raspberries, blueberries, etc)
2-3 thin orange slices
In a clear cup place 2 oz of your favorite furit and then 2 oz. of low-fat-yogurt. Repeat layers. Now it's time to make your foodimal! For the cockatiel face, place 2 raspberries on top of your par-fait for the eyes. Cut the grape almost in half, hinge at the back and open the front to form a beak. Fan slices of oranges above the eyes for feathered flair!
1 large russet potato
1 teaspoon of low-fat sour cream
2 chives, sliced into small pieces
2 dried currants or raisins
4 baby carrots
3 silvered almonds (*optional)
Preheat the oven to 350 degrees. Wash potato with a brush and cold water. Dry and poke 8 holes with a fork. Place potato directly on oven rack (or on a baking sheet). Bake 1 hour until potato feels soft (test with a fork). Remove from oven and allow 10 minutes to cool or wait until potato is manageable to touch. Now it's time to make your foodimal! Cut two slits towards the front of the potato and scoop out some of the potato to create the mouth. Add a dollop of low-fat sour cream for the tongue and a few chives for the teeth. Use two currants or raisins for the eyes and press into the potato (scoop out a little hole with a fork for placement if needed). Poke 4 holes in the base of the potato and insert the baby carrots as legs. Cut 1 small slit behind each eye and 1 slit at the back, add almonds to create ears and tail. *Please be cautious of nut allergies.
1 tablespoon olive oil (or cooknig spray)
1 lb ground chicken or turkey
1 package (1.25OZ) ORTEGA Taco Seasoning Mix
1 package (12 count) ORTEGA Taco Shells
1 1/2 cups lettuce
1 tomato (diced)
1/2 cup low-fat sour cream
2 sliced green bell peppers
A few sliced black olives
Heat olive oil (or cooking spray) in a large skillet over medium-high heat. Add ground chicken/turkey, break up into smaller pieces and cook 2-3 minutes or until browned. Add ORTEGA Taco Seasoning Mix, stir and cook thoroughly. Divide chicken/turkey evenly among shells and top with lettuce, tomato and low-fat sour cream as desired. Now it's time to make your foodimal! Position one taco standing up and on taco on its side, perpendicular to each other. Place 2 black olive slices on the taco in its side to make the eyes (the rest may be added to tacos if desired). Lay 2 green pepper slices on each side of the standing taco to create legs and place one at the back for the tail.
