KANSAS CITY, Mo. - Many people associate summer with fresh produce and great food.
Chef Brad Gilmore from Gram & Dun stopped by 41 Action News Midday to share his recipe for Miso Brased Pork Belly.
Miso Braised Pork Belly
1# slab bacon or Pork Belly
2 T Olive Oil
1 cup peeled fresh ginger
4 shallots
6 garlic cloves
1 stalk lemon grass
¼ cup brown sugar
1 cup red Miso Paste
6 cups Pork or Chicken stock
1 cup soy sauce
1 bay leaf
Preheat oven to 250*F
Score Pork belly, heat oil in cast iron skillet and sear all sides of pork belly just until it begins to brown(2 to 3 minutes) set aside.
In braising pan, sweat ginger, shallot, garlic, lemon grass
Add sugar and red miso and cook until dissolved
Add liquid, add pork
Cover tightly with plastic wrap and foil and place in oven for 2 ½ hours
