Jasper stops by the NBC Action News Midday kitchen to stir up a heart-healthy pasta meal.
Whole Grain Pasta, Broccoli & Garlic
8 oz. Whole Grain Pasta
1 Large Bunch Broccoli cooked al'dente
1 cup spinach leaves
1/2 cup green onions minced
1 1/2 tsp. Garlic minced
1/2 cup XV Olive Oil
1/2 cup chicken broth
Red pepper flakes to taste
Grated Romano Cheese
Cook pasta according to pkg. directions. In a large saute pan, heat olive oil. Add garlic and green onions and remove from stove. Garlic and onions will continue to cook in hot pan. Add spinach and chicken broth, return to heat and saute. Add cooked broccoli and toss. Season with red pepper flakes. Add pasta, toss with grated cheese and serve immediately.
Chef Jaspers Suggestions: I like to add fresh herbs, grilled chicken or shrimp for added flavor along with any fresh local vegetable. This recipe is very simple to prepare and by using whole grain pasta, the dish is very healthy and lower in calories.
