KANSAS CITY, Missouri - Crust
1 Cup Flour
1/8 Cup Sugar
Pinch Salt
4-oz. Butter (Diced)
Ice water
Filling
4 Peaches (Thinly Sliced)
1/2 TBSP. Flour
1/2 tsp. Cinnamon Topping
1/4 Cup Brown Sugar
1/2 tsp. Cinnamon
Preheat oven to 375º.
For the Filling: Place peaches in a bowl and mix with sugar, flour and cinnamon. Refrigerate.
For the Crust: Place flour in bowl. Add sugar, salt and chilled butter. Mix with a few teaspoons of water. Roll into a ball, wrap with cellophane and refrigerate.
To prepare Peach Crostata: Roll dough out on a non stick baking sheet into a circle. Place chilled peach filling in middle and spread, leaving a 1 1/2 inch lip. Fold edges. Sprinkle top with brown sugar and cinnamon mixture. Place in oven and bake 45-50 minutes until crust is golden. Remove from oven and serve warm.
Chef Jasper’s Notes: Nothing spells summer better than fresh peaches. I’m talking chin dripping, sweet as sugar, peaches so fresh you think they just fell off the tree. Here is a quick and easy recipe that tastes so good and just the right dessert for those hot summer days. I like to serve a dip of ice cream with my crostata or a nice dollup of freshly whipped cream. Sit back, relax, and enjoy the summer.
