KANSAS CITY, Mo. - A simple walk could make a big difference for a Kansas City man and the young people he’s trying to help.
Jonathan Smith is founder of an organization in Kansas City, Mo., called LEGACY, Leadership Empowerment Growth Achievement Comes from our Youth .
One of Smith’s programs is called Youth Can’t Weight. The 340 pound man started walking to lose weight in December, 2011. His goal is to lose 100 pounds by December 2012. He’s asking for one dollar donations for every pound he loses and plans to use the money to fund after-school programs for Kansas City area youth.
Smith invited me to his walking workout at Tower Park, at 75th and Holmes in Kansas City, Mo. One of his youth volunteers, Richard Jones, joined us.
Smith said he is motivated to lose the weight because he wants to teach young people about obesity, literacy and finances to empower those young people to make choices to avoid a life of crime and violence.
Smith also shared his healthy recipe for Turkey Spaghetti. Here are the ingredients:
13 ¾ oz spaghetti, whole wheat, cooked (1 package)
1lb ground turkey, cooked
4 oz. ground breakfast turkey sausage Honeysuckle white
1 green bell pepper, chopped
1 red bell pepper, chopped
1 yellow onion
½ tsp garlic powder
½ tsp sea salt
½ tsp black pepper, ground
¼ tsp oregano
1/8 tsp cayenne pepper, ground (optional for spicy)
1 can 14.50 oz diced tomatoes
2 can 8 oz Hunts Tomato Sauce With Italian Herbs (Basil, Garlic, Oregano) and
8- 16 oz Water Depend on how thick you want sauce.
Cook lightly chopped veggies and season lightly with a little olive oil. Add ground turkey & sausage, brown ground turkey & sausage, add rest of seasoning and drain.
Cook spaghetti according to package directions. Drain and set aside. Add spaghetti sauce and water and heat through with turkey.
Mix in cooked spaghetti and serve.
You may want to switch from the tomato sauce with Italian Herbs and use a sugar free sauce and add the herbs yourself. The taste between the two sauces is very similar, but the sugar free sauce has fewer carbs.
