KANSAS CITY, Mo. - Judy Heeter is rediscovering some healthy recipes as she and her husband, Jim Heeter, transition to a new healthy lifestyle. Jim is the CEO of the Kansas City chamber of Commerce, and is competing with Kansas City Mayor Sly James to lose weight and get healthy.
Here’s her recipe for a quick and easy Orange Roughy.
ROUGHY PORTUGUESE
4 fillets Orange Roughy or other firm white fish (1 1/2-2 lbs)
4 cloves garlic, minced
2 fresh tomatoes or 1/2 can with juice
1/2 onion, minced
1 tsp. parsley
1/4 c. White wine
1/2 tsp. olive oil
Sauté garlic, onion and parsley in olive oil over medium heat for 2 to 4 minutes or until softened. Stir in tomatoes and wine. Wash filets and place in ovenproof dish. Pour tomato mixture over. Bake at 350 degrees for 25 minutes. Serve over brown rice.
