Chipotle-Honey Glazed Mahi Fish Tacos with Chipotle Cream Rice and Grilled Vegetables
1 lb fresh Mahi Mahi
2 Tbl cajun seasoning
2 tsp kosher salt
16 fl oz Chipotle-Honey Glaze (recipe follows)
1 cup Chipotle Aioli (recipe follows)
Your favorite tortillas
Non-stick pan spray
Bamboo Skewers soaked in water or Cointreau Liquor

1.  Cut the Mahi Mahi into cubes about 1" x 1".  Skewer the fish onto the skewers from end-to-end

2.  Mix the Cajun seasoning and the salt together and season all of the fish skewers on all sides

3.  Grill the fish over a hot grill, basting with the Chipotle-Honey Glaze as they cook

4.  Spray your favorite tortillas with non-stick pan spray and heat them as well on the grill

5.  Once the fish has cooked to your desired doneness, pull the fish off of the skewer using the tortilla

6.  Garnish with Chipotle Aioli and your favorite taco toppings

Serve with grilled summer vegetables and your favorite beer or margaritas!

Chipotle-Honey Glaze
1 fl oz oil
2 Tbl fresh garlic, minced
4 fl oz Cointreau Liquor
3.5 oz ( about half of a small can) chipotle peppers in adobo sauce, pureed
1 cup honey
1/2 cup orange juice concentrate
2 limes, juiced
4 fl oz balsamic vinegar
1 cup Teriyaki Sauce
1.5 tsp kosher salt

Chipotle Aioli
1/2 cup sour cream
1/2 cup mayonnaise
1/2 tsp kosher salt
1 lime, juiced
1 tbl chipotle peppers in adobo sauce, pureed

1.  Combine all of the ingredients in the food processor and puree until smooth
