Café Sebastienne dishes up Grilled Ruby Trout with an Apple-Fennel Salad

With the change in season comes a new Spring menu at Café Sebastienne in the Kemper Museum. Sous Chef Janet Ross dishes up new menu item Grilled Ruby Trout with an Apple-Fennel Salad!

Grilled Ruby Trout With An Apple-Fennel Salad
Using a mandolin, shave a stalk of celery,
Granny Smith apple and one fennel bulb.
Julienne the apple.
Make a mustard vinaigrette: combine 1/4 c. apple cider vinegar, 2 Tbsp. whole grain mustard, 1 tablespoon honey, whisk in Extra Virgin olive oil, add salt and pepper to taste.
