Gram & Dun dish up a Caribbean style Pheasant

We are in the height of hunting season and Gram & Dun have put a little Caribbean flare on their pheasant. Watch the video in the player above as Executive Chef, Bradley Gilmore demonstrates how to dish up Jerk Pheasant with Southern Fried Rice and Texas Pete Gastrique.

Thanksgiving Dun Family Style

Cost: $30 adult, $12 kid

Southern fried rice
2 cup basmati rice
1/2 cup Black eyed peas
¼ cup Bacon
1T Anaheim pepper
2 each Cherry tomato (quartered)
1oz Fried rice sauce
1 egg
In a very hot sauté pan or wok, sauté Anaheim peppers, bacon until caramelized add tomatoes and black eyed peas, then add rice.  Saute until combined, add sauce and finish with egg.
Fried rice sauce
Soy sauce 1 cup
Oyster sauce 1/3 cup
Worcestershire sauce 1/3 cup
Combine all ingredients and whisk until incorporated
