Sandy Tugman, co-owner and food director at the Great Day Cafe showed us how to make Quinoa Tabbouleh, a dish that is both delicious and healthy!

Quinoa Tabbouleh
2 cups water
1 cup quinoa
Juice of 1 lemon
Juice of 1/2 lime
1/3 cup olive oil
3 Roma tomatoes, deseeded, diced
1/2 cup chopped onions
1 cup deseeded, chopped cucumber
1/3 cup chopped fresh mint
1 1/2 cup chopped fresh parsley
1 tsp. salt
1 tsp. Great Day Hurray (optional)
1 tsp. granulated garlic

Boil water in a sauce pan. Add quinoa and bring to a boil. Turn off heat and cover. Allow to set 20 minutes, then cool. In a large bowl, add all other ingredients. Stir. Add chilled quinoa and mix well. Cover and refrigerate for 10-12 hours before serving.
