How to cook mussels

Chef Michael from Café Trio demonstrates the proper way to cook mussels.

Prince Edward Island Mussels

  • 1 lb Prince Edward Island Mussels, washed and beards removed
  • ½ tbsp minced shallot
  • 1 tsp minced garlic
  • ¼ oz fennel
  • 1 oz roasted cherry tomatoes
  • ½ oz pancetta or bacon, diced
  • Salt and black pepper to taste
  • Pinch crushed red pepper
  • 4 oz white wine (chardonnay or chablis is good)
  • 1 oz butter
  • 2 oz heavy cream

Directions:

In a sauté pan, cook your pancetta until crisp. Drain off any excess fat if desired. Turn heat to high and add your tomato and fennel. Sauté for a moment then add your shallot and continue to cook. Add the garlic and seasonings towards the end. Garlic burns the quickest so should be added towards the end of the cooking process. Add your mussels and flip the pan to toss the ingredients together. De-glaze with white wine. Add the butter and cream and cover for 2-3 minutes. Mussels are finished when their shells have opened. Taste the pan jus for seasoning if needed. Serve with grilled bread
