Middle Eastern Style Mixed Bean Salad
16oz of fava beans, washed and drained
5oz of chick peas, washed and drained
1 cup of fresh diced tomato
2 cloves of fresh minced garlic
¼ cup of minced white onion
¼ cup of sweet green pepper
¼ cup of chopped parsley
Juice of a whole lemon
3 tsps of olive oil
¼ tsp of dry mint
Salt and black pepper to taste
Mix all ingredients in a bowl, best served chilled. Serve with warm pita bread.
