RECIPE: Black Bean Enchilada Stuffed Pepper

Chef Jeremy Lane from The Homesteader Café shares his recipe for black bean enchilada stuffed peppers. 

Ingredients:

  • 1/3 c  Red onion diced small    
  • 1/3 c  Red Bell Pepper diced small
  • 2 T Jalapeno Minced    
  • 1 C Corn
  • 1 C Black Beans 
  • ¼ tsp salt    
  • 1 tsp Black Pepper
  • 2T red wine vin    
  • 2T Olive OIl
  • 2T Honey    
  • Pinch Cayenne    
  • 1 tsp Oregano
  • 1 tsp cumin

  • 1 c cooked quinoa
  • ½ c enchilada sauce
  • Cheese optional
  • 4 roasted red bell or Poblano peppers

  1. Combine first set of ingredients in mixing bowl and mix well.
  2. Add ingredients from mixing bowl to hot pan. Stir until heated thru.  Add enchilada sauce and stir until hot.  Add cooked quinoa and stir until hot again.  Place filling into roasted peppers, top with cheese. Place in oven to keep warm and melt cheese.
