Banana Bread French Toast

Banana Bread Ingredients
3-4 ripe bananas, smashed
1/3 cup of melted butter
1 cup of sugar
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking soda
Pinch of salt
1 ½ cups of all-purpose flour

French Toast Batter Ingredients
2 cups half and half
1 egg
2 tablespoons brown sugar
2 tablespoons cinnamon
Vegetable oil for frying

Directions
Preheat oven to 350 degrees. With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and stir in. Add the flour last and mix. Pour mixture into a buttered 4x8 inch loaf pan. Bake 1 hour. Cool on a rack. Remove from pan and slice.

With a whisk, mix all the French toast batter ingredients in a bowl until well blended. Dip the banana bread slices one by one in the French toast batter, ensuring that both sides of each slice are coated evenly. Heat vegetable oil in a skillet over medium-low heat. The oil is ready when a drop of water sizzles in the skillet. Place the battered banana bread in the skillet and fry on each side, approximately 2-3 minutes, until golden brown and crisp. Transfer to the rack in a warm oven to keep hot while frying all batches. Serve immediately.
