Jazzoo celebrates jazz and helps KC Zoo animals

It’s a celebration of jazz and helps feed and care for more than 17,000 animals. Chef Alex Staab of Chicken N’ Pickle fills us in on Jazzoo.

Porchetta Sandwich

  • 4 Farm to Market Ciabattini
  • Roasted Porchetta (Whole belly of pig, stuffed with two pork tenderloins. Seasoned with 5 slices of cloves of garlic, 4 sprigs of rosemary, 4 tbsp of ground juniper, salt and pepper.  Roasted on our rotisserie oven till internal temp of 145.)
  •  2 cups arugula
  •  Artichoke Mayo (6 oz grilled artichokes, 1 lemon, and 8 oz of mayo. Juice and Zest the lemon and blend remaining ingredients, season with salt and pepper to taste.)

To Assemble:

Toast the bread, spread the mayo on the top on bottom of the bread, slice the porchetta and stack high.  Place arugula on top of the porchetta and drizzle olive oil and top with bun.
