|Pecan Crusted Turkey Medallion|
|3/4 cup panko bread crumbs |
1/2 cup finely chopped pecans
1/2 teaspoon dried sage
1/4 teaspoon salt
1/4 teaspoon pepper
|3 eggs, lightly beaten |
2 cups flour
4 turkey breast cutlets (4 oz each)
1/2 cup olive oil
Combine first 5 ingredients in a bowl; set aside.
Whip eggs in separate bowl and set aside.
Place flour in bowl; set aside.
Dip turkey cutlets in flour, then egg; then coat with breadcrumb mixture.
Place olive oil in pan and allow to get hot. Working in batches, pan fry turkey cutlets on both sides until golden brown. Place on small pan with a rack. Place in 350 degree oven and bake until done.
Coat cutlets with cooking spray.
Bake at 350 degrees for 12 minutes or until juices run clear when cut with a knife.
