Holiday Walnut Craisin Oatmeal Cookies
12 cookies
1/4 cup walnuts, toasted, chopped
1/4 cup powdered sugar
2 egg whites, room temperature
1 teaspoon vanilla extract
1/4 cup craisins
1/4 cup applesauce, unsweetened
1/4 cup Brown Rice Syrup
1/4 cup all-purpose flour
1/4 cup flax meal
1/4 cup ground spelt flakes
1/2 teaspoon baking powder
1/2 teaspoon cinnamon
1/2 teaspoon kosher salt
1/2 cups dry oats

Preheat oven to 350 degrees.

 

Toast walnuts, chop, and set aside.

 

Beat Brown Rice Syrup and applesauce in an electric mixer, and then add the powdered sugar until light and fluffy.

 

On low speed, add the egg whites one at a time, and then add the vanilla extract.

 

Sift together dry ingredients in a separate bowl.

 

Slowly add the dry ingredients to the wet ingredients; mix well.

 

Add oats, craisins and walnuts.

 

Line a cookie sheet with parchment paper and butter it.

 

Use a tablespoon to measure out each cookie and place on the parchment paper.

 

Bake cookies for 12-15 minutes, or until lightly golden.
