OVERLAND PARK, Kan. - Traci Flores was an inspiration to me as she demonstrated how to make all the right moves in her kickboxing class at AmeriKick in Overland Park. Flores is the instructor and I was her guest for my weekly workout.
The class started with some warm-up exercises. Then we put on our boxing gloves and started punching and kicking our individual punching bags.
About 20 students were in the class.
I did side kicks and back kicks and upper-cuts and hooks and jabs. It was a real lesson in kickboxing terms and the full experience. I would definitely go back for another workout!

Flores also shared her delicious recipe for Stuffed Sweet Potato Pizza. If you'd like to give it a try, you can.
3 medium sweet potatoes, washed
2 cups spinach, washed, stems removed
1 cup broccoli florets
½ red bell pepper, julienned
1-2 cloves garlic, minced
1 cup marinara, store bought or homemade
½ cup part-skim shredded mozzarella cheese (omit for vegan diet)
Bake sweet potatoes in a 450-degree oven for an hour. If short on time, pierce the flesh of the sweet potatoes and microwave on high for approximately five minutes per potato, depending on the size.
While potatoes ore baking, spray a skillet with non-stick cooking spray and sauté your veggies till tender.
Once potatoes are done, split open and stuff with your veggies. Top with marinara and cheese.
Place stuffed potatoes back in the oven and broil for a few minutes, just until the cheese melts and starts to turn golden.
Pick a topping and enjoy!
