KANSAS CITY, Mo. - I admit that when I first heard the term Silver Sneakers I thought it would be a fairly easy workout; but I found it to be challenging, beneficial and, most of all, fun.
EllenMarie "Foxy" Fox leads the Silver Sneakers workout at the Cleaver Family YMCA near 70th and Troost in Kansas City, Mo. "Foxy" is a feisty, energetic and encouraging woman who loves working out and loves to help people get in shape.
We used light hand weights to improve upper-body strength and some mini exercise balls to strengthen our abdominal muscles. We even had a fun exercise of throwing the balls and catching that gave our brains a good workout! I would definitely try it again.
Foxy's Healthy Chicken Breast Recipe
"Foxy" also shared her recipe for a tasty, low-calorie chicken breast that can be frozen or thawed for one or many servings. Here are her instructions:
You'll need one package(s) of boneless, skinless chicken breasts. (I make a lot and freeze two filets in sandwich bags.)
1. Slice chicken into palm size pieces and pound flat. I use an old-fashioned, hammer-like meat tenderizer.
2. Sprinkle chicken slices with olive oil and judicious amounts of seasoned bread crumbs, some garlic, parsley or a little hot sauce, and/or lemon juice, light soy sauce. Season with what you like!
3. Spray cookie sheet with oil. Arange chicken pieces so they don't touch one another and spray chicken. Broil for about 5 minutes on each side.
This is an easy, tasty, healthy and lo-cal way to have chicken ready for sandwiches, stir-fry, chicken spaghetti sauce or your favorite ethnic recipes.
