The 52nd Annual Greek Festival lands in Overland Park June 7-9

The 52nd Annual Greek Festival comes to Overland Park June 7-9. The weekend will feature a variety of Greek food, including savory and sweet items. In the evening, you can enjoy some Greek music by A Night in Athens and dance performances.

Friday, June 7: 5:00 pm - 10:00 pm
Saturday, June 8: 11:00 am-10:00 pm
Sunday, June 9: 11:00 am to 8:00 pm.

1/4 c ricotta cheese
1/4 c romano cheese
1/4 c grated kefalotiri
1/4 c asiago cheese
2 lbs feta cheese, crumbled
1/4 c kasseri cheese
1/4 c parmesan cheese
4 eggs
1/4 c milk
1 1/2 tsp dill
3/4 lb butter
 3/4 c olive oil
1 lb phyllo salt & pepper to taste

Combine cheeses, eggs, milk and dill. Cut phyllo in 3"x 15" strips and brush each with melted butter. Place 1 tbsp cheese mixture at one end. Fold corner over to make a triangle. Continue folding in the form of a triangle until entire strip is used. Press edges down. Repeat same procedure until all ingredients are used. Brush tops with melted butter. Bake in 375° oven for 20 minutes or until golden brown. Serve warm.

Yield: About 50. May be frozen and baked as needed. Very good served as appetizers or to accompany a luncheon salad.
