Zucchini Poppers are perfect for a Memorial Day BBQ

Door to Door Organics delivers farm-fresh organic produce and a selection of local, natural and artisan groceries right to your door. In the KC Live kitchen, they shared their unique Zucchini popper recipe that gets us in the mood for a Memorial Day BBQ. 


Zucchini Poppers

3/4 cups goat cheese
2 zucchini, sliced very thin lengthwise
1/4 cups sun-dried tomatoes, drained and minced
olive oil
salt and pepper to taste
chives or green onions, trimmed and long enough to be used as "strings"

Preheat your grill to medium high heat.
Brush the zucchini slices with the olive oil and season with salt and pepper.
Mixed the sun-dried tomatoes and goat cheese together.
Grill the zucchini slices on both sides, until golden brown. Remove from the grill and immediately spread the goat cheese mixture on the slices. Roll them up and secure by tying with the chive "string".
Serve either hot or at room temperature.
