Tailgate with your leftover turkey

KANSAS CITY, Mo. - Ingredients
3 Cups Diced Turkey (white and dark meat)
3 Cups Panko Bread Crumbs
4 Whole Eggs
1 Serrano Pepper Small Diced
1 Shallot Fine Diced
1 Green onion Diced
Salt and Pepper to Taste

In a large mixing bowl, use hands to combine all ingredients until well incorporated. Form into small patties.
In a large, high walled pan, heat ½-cup vegetable oil to 300 degrees. Brown croquets for two minutes on each side. Remove from heat and place in a 350 degree oven for 6 minutes to finish cooking.
Garnish with leftover cranberry sauce and sliced green onions.

Serving Size: 4 Croquets
