Celebrating National Dessert Month with Chaz on the Plaza

KANSAS CITY, MO — October is National Dessert Month, and we are celebrating with the help of our friends at Chaz on the Plaza. Chef Shawn Hartwig joins us with a delicious recipe for Brown Butter Apple Cheesecake.

BROWN BUTTER APPLE CHEESECAKE

Topping: Caramel Apples
2 lb sugar
1 qt cream
12 apples sliced
1 tbsp cinnamon
Peel and slice apples, mix with seasoning and cook on medium heat until just golden brown with 1oz whole butter. Cool and put aside.

Bottom: Dulce de Leche
1 can sweetened condensed milk- in a sauce pan cover half way with water and simmer with lid on for 2 hours. Let cool and serve

White Chocolate Mousse
3 lbs white chocolate
1.25 qts cream
8 sheets gelatin
1.5 qts cream
For the topping. Heat cream 1 part cream and white chocolate and add gelatin, let cool. Whip other part Cream, once firm peaks start fold into other chocolate mix

Base: Brown Butter Cheesecake
6 lbs cream cheese
28 oz sugar
6 eggs
2 cups heavy cream
1 lb brown butter

Start with cream cheese and sugar, then eggs, cream, and brown butter in that order. Bake at 325 in a hot water bath for 30 minutes in 4oz ramkins.
