Organic family recipes from Nana's Cafe

Nana’s Caféin Blue Springs is dishing up organic farm to table meals. Alana Dennis, owner, shares one of her family recipes.

Uncle Steve's Patty Melt

  • 2 pinches of Himalayan sea salt
  • 2 pinches of organic ground black pepper
  • 2 pinches of organic garlic
  • 5 rings of organic onion
  • 1 organic beef patty
  • 2 slices of organic multigrain bread
  • 1 slice of organic Swiss cheese
  • 2 Tbs. organic butter
  1. Using a cast iron skillet season each side of patty melt with salt, pepper, and garlic. 
  2. Cook patty to desired heat temperature.
  3. Using a separate skillet saute onion rings and butter until edges are caramelized.
  4. In third skillet toast bread with butter.
  5. Once patty is cooked to desired temperature place beef patty on one side of toasted bread.
  6. Place Swiss cheese and caramelized onion on top of the patty.
  7. Then add the second piece of toast to the top of the sandwich.
  8. Cut and serve.

Papa Tom's Favorite Omelet

  • 3 pieces of diced turkey
  • 3 pieces of diced sausage
  • 3 eggs beaten
  • 1 Tbs. butter
  • 1 pinch of Himalayan pink salt
  • 1 pinch of organic ground black pepper
  • 1 pinch of organic garlic
  • 1 slice of organic Colby Jack cheese 
  1. Using a cast iron skillet on medium heat add turkey bacon and turkey sausage in the pan with melted butter.
  2. Let meat cook until golden brown or crispy.
  3. Add 3 eggs to the skillet that have been beaten in a separate bowl.
  4. Roll the pan around with the egg on the edges and loosen the egg with a spatula. Flip or fold egg.
  5. Then place the cheese in the middle of the egg and fold omelet.
  6. Serve with fresh fruit.
