Recipe: Hereford House Seafood Stuffed Mushrooms

Hereford House Seafood Stuffed Mushrooms

Ingredients:

Seafood filling

  • 1 1/2 lbs. cream cheese, softened
  • 1/2 c. egg yolks
  • 1/2 c. bread crumbs
  • 1/2 c. green onions, chopped
  • 1/2 tbsp. lemon juice
  • 1/2 tbsp. Worcestershire sauce
  • 1/2 tbsp. garlic powder
  • 1/2 tbsp. salt
  • 1 tsp. white pepper
  • 1 lb. snow crab, thawed
  • 1 lb. bay shrimp, thawed
  • 1 lb. flake crab meat, thawed

1. In a mixer, add the cream cheese, egg yolks, bread crumbs, green onions, lemon juice and Worcestershire sauce.

2. With the paddle attachment, turn on mixer on speed level 1. Mix for 3-5 minutes on level 1 until the cream cheese begins to soften. Stop the mixer.

3. Add the dry seasonings and turn on mixer to speed level 3. Mix well for approximately 3 minutes, stopping periodically to scrap down the bowl. Stop the mixer.

4. Take handfuls of the seafood and squeeze out any excess moisture. Add to the existing mixture in the mixer.

5. Turn mixer on to speed level 1. Mix in the seafood until just incorporated.

6. Scrape down the sides of the bowl.

7. Filling is read to be stuffed into mushrooms.

 

Ingredients:

  • 6 mushrooms
  • 2 oz. garlic butter, melted
  • 6 tbsp. seafood filling (recipe above)
  • 1/2 c. bread crumbs

1. Preheat oven to 350 degrees.

2. Remove the stems from the mushrooms and place in colander.

3. Wash mushrooms.

4. Place the mushrooms on a parchment paper-lined sheet tray and brush with garlic butter.

5. Place mushrooms in the 350-degree oven and back for 8-10 minutes.

6. Remove from oven and cool immediately in refrigerator.

7. Once the mushrooms have cooled, fill the caps by spooning approximately 1 tbsp. of seafood filling.

8. Round off the top of the seafood filling with the bowl of the spoon so the cap has a slightly domed appearance.

9. Roll the stuffed mushrooms in bread crumbs.

10. Place on parchment paper-lined sheet tray.

11. Bake mushrooms in a 350-degree oven for 8-10 minutes.

12. Allow to cool and enjoy!
