Simple, delicious fall recipe from Jasper's

It’s not fully fall without some comfort food. We head to Jasper’s Italian Kitchen to see where the magic really happens. Jasper Mirabile joins us with a simple, yet delicious fall recipe for Jasper’s Italian Apple + Sweet Potato Gratin.

Jasper’s Italian Apple + Sweet Potato Gratin 

INGREDIENTS 

  • 4 tablespoon unsalted butter
  • 1 Honey Crisp apple (peeled, cored and sliced)
  • 1 pound sweet potatoes (peeled and sliced thin)
  • 1 pound peeled, seeded, and cubed acorn or butternut squash 
  • 1/2 teaspoon salt
  • 1/4 cup balsamic glaze 
  • 1/2 teaspoon apple pie spice 
  • 1 1/4 cups heavy cream
  • 1/2 cup fresh bread crumbs
  • 1/4 cup brown sugar 

METHOD

Preheat the oven to 375°F. In a 10-inch skillet, melt 2 tablespoons butter. Over medium-high heat, sauté apples until slightly caramelized. Place squash and apple in a medium bowl and season with balsamic, salt and apple pie spice. Mix well.  

Butter a 10-inch gratin dish and layer with half the potatoes, one overlapping the other. Add apple and squash mixture. Add remaining apples. Pour cream over all of mixture. 

Cover the dish with aluminum foil and bake for 1 hour, or until the potatoes are tender.

Remove from the oven. Turn the oven to 500°F. Sprinkle the bread crumbs and brown sugar over the potatoes and dot with the remaining butter. Bake 5 minutes and serve.
