Chewology brings a taste of Japan to Lenexa Public Market

KANSAS CITY, MO — Chewology is bringing a delicious taste of Japan to the Lenexa Public Market. Katie Liu-Sung and Josh Springer talk about what kind of food they offer at Chewology and how they source local ingredients. We’re also making homemade honey apricot goat cheese gyoza!

APRICOT GOAT CHEESE GYOZA:

Ingredients:
300 g goat cheese
150 g apricot
75 g almond
1/2 TBS chili flakes
1 1/2 TBS honey
40 g negi
1 lemon or lime zest

Steps:
Robo coupe apricot and almond to small chunks/pieces. Mix all ingredients except negi. Fold in chopped negi when ready to use the filling. Roll into 17g balls.

Hot Dough:
525 g bread flour
200 g all-purpose flour
375 g hot water
25 g cold water
Add all dry ingredients {flour & salt} to stand mixer, then add in hot and cold water; mix for 10 minutes. Once timer stop, bring dough out, knead to smooth ball and cover, let sit for 10 minutes.
