Egg & Chorizo Pizza

Chorizo / Egg Mexican Pizza  Serves 4
Ingredients:  8-6" flour tortillas; 1 lb ground chorizo; 2 large fresh eggs; 1 cup cooked & drain pinto or black beans; 1/2 tsp cumin, ½ tsp garlic powder; ½ tsp dried oregano; ½ tsp black pepper; ½ tsp salt; ½ cup salsa picante; 2/3 cup salsa fresca (pico); 1 cup shredded Monterey jack cheese; 2 tablespoon water

Preparation:  1)Using your hands, mix chorizo, seasoning & water together; 2) Brown the chorizo ; mixture over medium-high heat for 5-6 minutes, using wooden spoon or spatula to break up the meat as it cooks; set aside;  3) scramble 2 large eggs in skillet add to chorizo; 4) In 375 degree oil, fry tortillas for 3-45 seconds per side, drain on paper towels; 5) Spread beans, then meat, then salsa over 4 of the tortillas; set aside;  6)  spread cheese, then salsa fresca over remaining tortillas; 7) Stack one of these tortillas on top of the other tortilla;  8) Place pizzas under a hot broiler just until cheese has melted

Mango Guacamole (serves 4-6)
3 tblespoon onion
1 jalapeño
Cilantro small sprig
Salt
1/2 lime
2 large ripe avocado
1 mango
In a medium bowl Mix / mash diced onion, jalapeño; cilantro together; squeeze 1/2 lime; add 2 fresh ripe avocado; mash everything together with a fork; mix in 1 small mango cubed to guacamole (do not mash mango)
