Chef Michael Smith is Kansas City’s first James Beard Award-winning chef and is getting ready to celebrate 10 years in the Crossroads.

Michael Smith’s Chitarra Spaghetti alla Norma
Serves 4

Ingredients

  • 1/2 red onion - thinly sliced
  • 2 medium Japanese eggplant  - cut 1/4-inch cubes
  • ¼ cup extra virgin olive oil
  • 1 pound chitarra spaghetti
  • ½  cup marinara sauce
  • 2 cups halved summer cherry tomatoes
  • 10 fresh basil leaves  - roughly torn
  • Salt to taste  
  • 1 teaspoon fresh cracked Black Pepper
  • 6 ounces ricotta salata - for grating on finished pasta

Method
Heat olive oil in a large skillet and sauté the onion until lightly brown. Add eggplant and cherry tomatoes and cook until soft. Add marinara sauce, basil, salt and pepper. Stir together until a good sauce is formed. Cook spaghetti in a very large pot of salted water until al dente. Strain pasta a combine with sauce. Stir coat the pasta well with the Norma sauce.

To Serve
Serve in individual bowls or a platter. Drizzle with more extra virgin olive oil and the grated ricotta salata.
