Oatmeal Jam Bars from The Pantry KC

We are treating our sweet tooth with Deepal Patel of The Pantry KC. She shows us how to make Oatmeal Jam Bars!

Oatmeal Jam Bars 

Ingredients 

  • 5 cup A.P. Flour 
  • 5 cups Quick Oats 
  • 2 cups Sugar 
  • 1.5lb Butter (melted) 
  • 2 tsp Baking Soda 
  • 1 tsp Salt 
  • 1.34oz Vanilla 
  • 40oz Jam- your choice- we like raspberry 
  • 2 cups Coconut 

 

Instructions 

Spray a flat sheet pan and line with parchment paper. 

In a large mixing bowl combine Flour, Oats, Sugar, Butter, Baking Soda, Salt, and Vanilla. Beat at a low speed scraping the side of the bowl until mixture is crumbly (1-2 minutes.) 

Reserve 4 cups of crumb mixture and press the remaining mixture into the sheet pan.  

Evenly spread the jam out onto the pressed crust of the bars. 

Sprinkle the reserved 4 cups of crumb mixture on top of the jam, then sprinkle the coconut on top. 

You can also add chocolate chips, nuts or candy pieces if you like. 

Bake at 350 degrees for approximately 25 minutes- until the crust is golden brown. 

Bars can be frozen for up to three months.
