Easy Cheezy Sauce
2 1/2 cups of water
1 cup of raw cashews
1/4 cup of nutritional yeast
1 tsp salt
1-3 tsps freshly squeezed lemon juice (optional)
1/2 - 1 tsp xanthan gun (optional)
Add 1/2 chipotle chilie or more if desired, diced tomatoes and peppers for garnish
Put water and cashews in a blender and process until creamy.
To culture the cheese pour mixure into a clean glass bowl, cover and let sit at room temperature for 8-24 hrs to sharpen the flavor (optional).
Transfer to a heavy medium pan or leave in mixer if skipping culturing option, and whisk in or add the Nutritional yeast, salt and lemon juice if desired. Cook over medium heat in pan or blend in mixer for several minutes. Add xantham gum for stretcher consistency the more added the stretcher it will be.
Add more lemon juice, peppers or other ingredients
Eat, enjoy and cover any leftovers for 4 days.
