RECIPE: Paella from JJ's

Paella (2 Serving dish)

Ingredients

  • 1 cup arborio  rice
  • ¼ cup diced onion
  • ¼ cup white wine
  • 4 cups chicken stock
  • 1 pinch Spanish saffron
  • 2 tbsp extra virgin olive oil  

 

  • 6 each shrimp 16/20 tail on
  • ½ cup calamari
  •  6 each mussel
  •  ¼ cup Spanish chorizo diced
  •  ½ cup tomato diced
  • 1 cup chicken stock

Directions

In a small pot saute the onions for 5 minutes. Add rice & stir with onions, add wine. Reduce wine halfway, add chicken stock and start cooking the rice with the saffron spice until al dente. When ready place it on a plate to chill.

In a medium pot sauté the shrimp, calamari, mussel for 2 minutes add chorizo, tomato, chicken stock and the rice. Incorporate and cover for 5 minutes and finish with salt and Italian parsley.
