It’s National Pigs in a Blanket Day and you better believe we are going to celebrate! Grill Mayor, Craig Jonesshares his special recipe for the occasion.
Pigs in a Grilled Cheese Blanket
Ingredients:
- 2 slices of your favorite bread
- 1 good quality hotdog (all beef) sliced lengthwise and grilled
- 2 oz. grated gouda cheese
- 4 Tablespoons of mayonnaise (do not use reduced fat or fat free)
Directions:
- Heat a non-stick skillet over medium heat.
- Spread the mayonnaise evenly on all 4 sides of the bread.
- Layer one slice of bread with grilled hot dog slices and the cheese.
- Place the remaining slice of bread on top of the other slice and press together.
- Place one side of the sandwich in the preheated (medium heat) non-stick skillet.
- Cook until each side is golden brown, and the cheese has melted, about 2 minutes a side.
Upgraded Pigs in a Blanket
Ingredients
- Irish sausages
- Puff pastry /thawed
- Egg
- Favorite dipping sauce
Directions
- Cook sausages on the grill or in a pan until an internal temperature of 155° is reached. Set aside to cool slightly.
- Unroll each sheet of puff pastry and cut into 4 pieces. Top with cooked sausage and a teaspoon of the dipping sauce.
- Roll up each sheet - pinch together to seal and trim off any excess.
- Place on a greased baking sheet - seam side down - and brush each roll with beaten egg.
- Bake at 375? for 25-30 minutes - until the pastry is golden and crispy on all sides and the meat has cooked through.
- Serve with a side of dipping sauce.
