Fresh morels -4-8ounces
1 Cup Flour
1 cup Cold water or milk
2 eggs
½ tablespoon Cajun Seasoning
Pinch of Salt and Pepper
2 cups high heat cooking oil
Wash the morels by brushing them free of dirt and cutting them in half. They may need to be ran under a little water to get clean. Let them dry well on paper towels before coating. Mix all dry ingredients together and then in separate bowl mix the milk and eggs together. Put mushrooms in flour then dip in milk and egg mixture, then back in flour. Shake off excess and put directly into hot pan of oil. Cook until golden brown and take out of pan and let drain on a cooling rack or something perforated to keep from getting soggy. Eat and enjoy!
