RECIPE: Beef Skewers With Stir Fried Fennel

Beef skewers with stir fried fennel
Beef
2 lbs sirloin or flank steak cut into cubes
Marinade
2 Tbs coconut aminos
1 Tbs fish sauce
1 ea bulb of spring garlic smashed
2 Tbs. olive oil
Drizzle of honey
Zest of 1 orange
Mix together all ingredients and marinate for 2 hours or up to 24 hours
Skewer the beef on kebab skewers and place on the hot side of the grill for 1 min, flip to the other side and cook for 1 min.
Place in the cooler side of the grill to continue cooking to desired temperature, 5-15 minutes
Dipping sauce for the beef
½ c cashew butter or sunflower butter
3 Tbs coconut aminos
2 Tbs honey
1 Tbs lime juice
2 Tbs. orange juice
2 ea Clive garlic minced
1 tsp. Fresh ginger
Pinch cayenne
1 Tbs water if needed
Blend all ingredients together
Fennel and Peas
2 Tbs coconut oil
1 ea fennel bulb sliced thin
8 oz peas fresh, cleaned
1 ea spring onion thinly sliced
1 ea clove garlic thinly sliced
1 Tbs coconut aminos
1 Tbs. grated ginger
4 each radish shaved
Heat the coconut oil over medium high heat.
Add the fennel and peas. Cook I disturbed for 1 minute
Add the onion and garlic, stir and cook I disturbed for 1 minute
Add the aminos, ginger and radish, stir and cook for 1 minute.
Serve with the beef.
