RECIPE: Mango Lassi Popsicles

Mango  Lassi Popsicle
yields: 12
                    1 VERY ripe mango
                    1 tsp ground cardamom
                    1 can (13.5 fl oz) coconut milk
                    1/3 cup brown sugar, packed
                    **1 shot of vodka (for the grownups)
Cube your mango and toss with the sugar and let sit for about five minutes. Bring the coconut milk and cardamom to a light simmer in a small saucepot, and add the mango-sugar mixture and cook for 1 minute. At this point, you can either blend the mango in a blender to make a smooth puree or decide if you'd like it a little more chunky with fresh bits of fruit in it. I personally like it smooth, so I use an immersion blender to puree my mixture right in the pot.
Add your vodka and give it a good stir, then a nice taste to see if you like it.
Transfer your mixture to something with a pourable spout and pour into your molds. Pop on the lid and add popsicle sticks, then let freeze for at least four hours.
