Breakfast Meatballs
Serves: 6
1 Pounds, 3 Ounces Ground Pork
1 Pounds, 3 Ounces Ground Chicken
1 Pounds, 1 Ounces Shredded Sweet Potato
3 Ounces Red Bell Peppers, medium dice
3 Ounces White Onion, Medium Dice
4 Ounces Mushrooms, chopped
2 Ounces, 1 Tablespoons, 2.25 Teaspoons Pure Maple Syrup
2 Ounces Bacon, Chopped
Crushed Red Pepper
1 Eggs
1 Tablespoons, 0.5 Teaspoons Salt
Mix all ingredients together in mixer with paddle until just combined                                                                                                                                     
Portion with blue scoop (2.5 oz by weight) onto sheet pans.                                                                                                                                                    
Bake at 350* on high for 15-20 minutes.
