Rainbow Loaf Cake with Lemonade Glaze
Makes 2 loaf cakes to serve 12
One 18.25 ounce lemon cake mix
One 3.4-ounce instant lemon pudding mix
4 large eggs
1 1/4 cups water
1/3 cup vegetable oil
1 teaspoon lemon zest 
2 teaspoons orange zest and orange food coloring
1 teaspoon lime zest and green food coloring
Lemonade Glaze
½ cup lemon juice
1 cup granulated sugar
Preheat the oven to 350 degrees. Grease small loaf pans and set aside.
In a large mixing bowl, mix the lemon cake mix and pudding mix with the eggs, water, and vegetable oil on low speed for 2 minutes. Divide the batter among 3 bowls. To the first bowl, mix in the lemon zest. To the second bowl, mix in the orange zest and orange food coloring. To the third bowl, mix in the lime zest and the green food coloring.
Divide the green batter between the two 9 x 5-inch loaf pans. Top the green batter with yellow batter. Top the yellow batter with orange batter.
Bake for 40 minutes or until a cake tester inserted in the center comes out clean.
For the glaze, combine the lemon juice and sugar in a 4-cup measuring cup and microwave on High for 3 to 4 minutes or until the sugar has dissolved. Using a cake tester or a wooden skewer, poke holes in the warm loaf cakes and brush generously with the warm glaze.
