Sohaila’s Kitchen brings a taste of Pakistan to Kansas City

KANSAS CITY, MO — Located in the Lenexa Public Market, Sohaila’s Kitchen is bringing an authentic taste of Pakistan to Kansas City. Owner Amna Humayon and Owner/Chef Sohaila Humayon join us to discuss their favorite dishes.

Chicken Biryani Recipe:

Chicken Biryani is hearty, delicious and flavorful dish full of fresh herbs and spices. It is served with a yogurt mint sauce. Biryani is typically served at large gatherings, wedding, and dinner parties.

Ingredients for the Rice:
1 cup Sella rice (parboiled rice)
¼ tsp. cumin seeds
1 whole star anise
1 whole bay leaf
1 cinnamon stick
1 tsp. salt
1 tbsp. cooking oil

Ingredients for the Chicken:
1 lb. chicken breast cut in medium pieces
1 onion finely sliced
1 tbsp. ginger garlic paste
1 tsp. red chili powder
1 tsp. coriander powder
1 tsp. cumin powder
Pinch of turmeric
½ tsp. salt
3 tbsp. cooking oil
1 tbsp. yogurt
2-3 dried plums
1 tomato sliced
3-4 curry leaves/fresh mint
A pinch of saffron soaked in warm water
2 tbsp. fried onions

Instructions:
Boil the water with salt, a bay leaf, cumin seeds, cinnamon sticks, and green cardamoms. Add the soaked rice and boil it until its cooked. Drain the rice and put it aside.
In a pan, add oil and fry the onions until crispy golden. Add the ginger garlic paste and all the spices and sauté well. Add the chicken and fry until its tender. Also add the yogurt and bring the gravy to a boil.
Garnish the chicken with tomato slices, curry leaves, and green chilies. Cover the cooked chicken with the boiled rice and add sizzling oil. Sprinkle the fried onions and the saffron. Cover the pot and let it simmer for 15 minutes. Serve with raitah (yogurt mint sauce). Enjoy!
