RECIPE: Fish and vegetables

The owner of Tavern at Mission Farms shares a recipe for a delicious fish and vegetable dish. Tavern at Mission Farms is one of several eaters in the KC area hosting Restaurant Week, Jan. 16-24. 


Arctic Char is pink in color and resembles salmon, but is more closely related to trout. The flavor is more mild than salmon, and Arctic Char is a delicate flaky fish.

The Arctic Char is pan seared with olive oil and then served over the roasted brussel sprouts and the sweet potato puree.

Sweet Potato Puree

2 sweet potatoes peeled, large dice

1/8 stick butter

3/4 qt cream

1/3 bunch Thyme (tie together)

1/2 tsp salt

Tie thyme with twine. Add all ingredients to small pot. Cook on low until potatoes are soft. Cool 10 minutes. Throw away thyme. Puree in blender until smooth.

Keep hot until ready to serve.

Roasted Brussel Sprouts

Clean and cut desired amount of Brussels in half.

Toss with olive oil drizzle, salt, pepper

Lay brussels cut side down on a sheet tray

Roast at 350 degrees for 20-25 minutes, do not stir
