KC's first food truck hub opens for business

For the first time in Kansas City, there’s a permanent location for mobile food trucks.

 

Chef Michael Foust just launched the city’s first ever food truck hub and named it Little Piggy.

 

Foust explained, “I thought there was a need in Kansas City, we’ve seen other cities doing food truck lots and stuff like that, but we wanted to take that concept and mold it into what Kansas City wanted.”

 

The former used car lot located on Southwest Boulevard provides space for several food trucks. The concept also allows for more job security for people like Chris Knowles, who runs Pie Hole for extra income.

 

 

“I think this is a huge game-changer for Kansas City. It’s really exciting and it’s been a long time coming, I think,” explained Knowles, who said his main job is stay-at-home dad.

 

Food trucks can be found all across the metro, but Knowles thinks the hub makes the process a little less complicated. “Go to Overland Park or Leawood or Shawnee or north of the river. You’re basically having to deal with health departments and bureaucracy and sales tax issues and everything in every one of those municipalities, and it’s just a lot to deal with.”

 

Little Piggy launched on Sunday with 1,000 people in attendance, and that’s only the beginning.

 

“This is just the first one we’re going to do. Over the next year or two, don’t be surprised if you see Little Piggy No. 2, Little Piggy No. 3 … and yes, we do like our puns,” Red Wattle Food Truck owner Aaron Turvey explained.

 

Little Piggy will have food trucks on the lot every Monday through Saturday.
