‘Tis the season for all the holiday cookies! And while this is wonderful for the tastebuds, it takes a lot of time and effort to bake them up. What if there were a way to fill platters of yummy cookies without turning on the oven at all? Well, we found an amazing recipe for No-Bake Ritz Cracker Cookies that the whole family is sure to love!

Amy over at the Belly Full blog has shared the easiest cookie recipe ever and there are plenty of reasons to love it. First, by using Ritz crackers, you remove the need for baking. The base of the cookie is already done for you!

Plus, these crackers are a perfect snack on their own with their salty and buttery flavor. When you add the rest of the ingredients, these cookies are the ideal combination of sweet and salty!

All you need to do is pick your favorite spread and put one teaspoon of it on each of 40 crackers. Then, stack them in pairs with the spread side up. This will give you 20 cookies. Next, take 20 plain Ritz crackers and top each of the stacks.

For the cookie’s filling, you can use peanut butter, almond butter, cashew butter or even sunflower butter, though Amy suggests filling them with some sort of cookie butter. But she cautions if you use the softer spreads, make sure to refrigerate the cookies so the butter sets before coating them with chocolate.

The best step is saved for last when you dip the cookies in melted chocolate to give them a luscious outer coating!

If you have a loved one with a nut allergy, do not fear! These cookies can be customized to include your favorite fillings including marshmallow fluff or Biscoff cookie butter.
