RECIPE: Brazilian Carreteiro

Chef Leonice Ludwig of Porto Do Sul shares there recipe for their Carreteiro.

Caipirinha
Ingredients:  Half a lime cut into wedges, 2 teaspoons brown sugar, 1 2/3oz of Cachaca.
Preparation:  Place lime and sugar in old fashion glass and muddle (mash the two ingredients together using wooden spoon).  Fill glass with crushed ice and add Cachaca. 
Carreteiro -
Ingredients:
2.25lbs. of dried beef with most of fat removed
¼ lb of smoked bacon
½ lb of smoked chorizo diced
1 ¼ lb rice (Brown Preferred)
2 cloves garlic
1 large onion chopped
Pepper
Parsley to serve
Preparation:
Cut dried beef in large cubes and desalt it by placing in a bowl with water and changing water two times every 6 hours for 12 hours or until excess salt is removed
After beef desalted, put in pot and bring to boil.  Drain the meat and shred it.
Soak rice in cold water without washing it
In Iron pan, fry the chorizo and set aside. Using the excess fat, fry the bacon, garlic and onion.  Then add the beef jerky, chorizo and pepper mixture stirring for at least 5 minutes
Drain the rice that was soaking and add to mixture in pan.
Add water, stir and lower heat and put lid half way on pan to simmer. 
Cook over low heat until rice is al dente. 
Serve and garnish with parsley.
