Rub Recipe
1 cup white sugar
½ cup light brown sugar, dried
½ cup garlic salt
¼ cup onion salt
¼ cup celery salt
½ paprika
1/4 cup chili powder
¼ cup black pepper1 tsp mustard powder
1 tsp cayenne pepper
The night before you plan to make the rub, spread the brown sugar out on a cookie sheet and let sit on the counter overnight to air dry.
Place a fine mesh strainer over a mixing bowl and pass each ingredient through the strainer. Use the back of spoon to break up any lumps that the strainer catches.
Stir to fully combine all of the ingredients.
Use liberally on your favorite barbecue meats.
Sauce Recipe
2 cups ketchup
1/2 cup dark brown sugar
1/4 cup white vinegar
1/2 cup water
1 tbsp Worcestershire sauce
1 tbsp soy sauce
1 tbsp prepared yellow mustard
1 tsp chipotle powder
2 tsp kosher salt
1.5 tsp ground black pepper
Combine all of the ingredients in a sauce pan and bring to a boil.
Reduce heat and simmer for 30 minutes, stirring occasionally.
