WATCH: Chef Jasper's low-sugar success

Chef Jasper Mirabile, owner of Jasper's Restaurant, is living proof of the benefits of reducing sugar from your diet.

Mirabile was gaining unwanted pounds and he decided it was time to lose weight. He realized how much sugar he was eating everyday and decided to stop. Since making that decision seven months ago, Mirabile lost 35 pounds.

Chef Jasper began trading high-sugar ingredients in his dishes to low-sugar options. 

"You'll be surprised that you can still enjoy great flavors and have wonderful tasting foods with less sugar," said Mirabile. 

On Wednesday, Chef Jasper provided some great recipe alternatives to kick out the sugar and replace it with fresh fruits and vegetables.

Jasper Mirabile's          Sugar-Free Chocolate Mayonnaise Cake

2 cups all-purpose flour.   

2/3 cup unsweetened cocoa powder

1 1/4 tsp. baking soda

1/4 tsp. baking powder

3 eggs

1 1/4 cup honey or maple syrup

1 tsp. vanilla extract

1 cup Hellmann's Mayonnaise

1 cup water                                                                                                                                                                                                

Preheat oven to 350°. Grease and lightly flour two 9-inch round cake pans*; set aside. 

In medium bowl, combine flour, cocoa, baking soda and baking powder; set aside.

In large bowl, with electric mixer at high speed, beat eggs, honey or maple syrup and vanilla for 3 minutes or until light and fluffy. Beat in mayonnaise at low speed until blended. Alternately beat in flour mixture with water, beginning and ending with flour mixture. Pour into prepared pans.

Bake 30 minutes or until toothpick inserted in centers comes out clean. On wire racks, cool 10 minutes; remove from pans and cool completely. 

Chef Jasper's Notes: Chocolate Mayonnaise Cake is my absolute favorite cake and was recently the Internet sensation this past March. I rediscovered my mother's recipe and wrote an article about this and it went viral. 

Unfortunately for me, I did not get to taste the cake while I have been sugar-free and trying to diet.

So....I went back in to my kitchen lab and reformulated the recipe using honey and it maple syrup.  I am telling you the cake is so moist and you will never know the difference.
