KANSAS CITY, Mo. — A South Korean-inspired restaurant plans to open a new location in the Waldo neighborhood of Kansas City, Missouri.
BiBiBop Asian Grill — which has locations in Ohio, Washington D.C., Maryland, Illinois and California — would take over the space formerly occupied by Pizzeria Locale at 505 W. 75th St., according to documents filed with the city.
The chain, which describes itself as inspired by the traditional Korean dish bibimbap, was founded in 2013.
A company representative told 41 Action News BiBiBop Grill hopes to open the restaurant this summer and also is exploring other locations across Kansas City.
The restaurant focuses on healthy and customizable options inspired by South Korean cuisine.
