HOMEMADE CRAB STUFFED RAVIOLI
INGREDIENTS AMT.
Jumbo Shrimp, Tails On 3 ea.
Scallops, 3 ea.
Fresh Peppermill & Kosher Salt To Taste
Olive Oil 2 fz.
Lemon 2 Halves
Crab Stuffed Ravioli 5 ea.
Garlic Cream Reduction 4 oz.
Mascarpone 1 Tbsp.
Raviolis - Jumbo 1
Fresh Chives To Garnish
Shredded Parmesan To Garnish
PROCEDURE
1. Sear 3 scallops on the flat griddle, Sauté the shrimp in oil and de-glaze
with 1 whole lemon, 4 oz. Garlic Cream Reduction and 1 Tbsp. mascarpone.
2. Cook raviolis in simmering water for 5 minutes, drain well and plate as shown.
3. Garnish with chopped chives and shredded parmesan.
